is responsible for preparing and cooking tandoor-based dishes such as breads (naan, roti, kulcha), kebabs, tikkas, and grilled items. The role includes dough preparation, marination, operating the tandoor safely, ensuring quality, and supporting the Tandoor Chef in daily operations.
Key Responsibilities1. Preparation & Mise en Place
Prepare dough for naan, roti, kulcha, paratha, and other breads.
Marinate meats, paneer, vegetables, and seafood for tandoor dishes.
Prepare accompaniments such as chutneys, garnishes, and spice mixes.
Ensure ingredients are fresh, properly portioned, and ready for service.
2. Cooking & Tandoor Operation
Cook breads and grilled items in the tandoor according to recipes and quality standards.
Maintain correct tandoor temperature and monitor cooking times.
Ensure dishes have the correct texture, flavor, and presentation.
Handle skewers, trays, and tandoor equipment safely.
3. Quality & Consistency
Maintain authentic taste and smoky flavor in tandoor dishes.
Ensure portion sizes, marination standards, and presentation are consistent.
Follow recipes and cooking procedures accurately.
4. Kitchen Operations
Assist the Tandoor Chef during service and busy periods.
Coordinate with other kitchen sections (curry, breads, appetizers) as needed.
Store and label ingredients following FIFO (First In, First Out) standards.
Help with receiving and organizing supplies.
5. Hygiene & Safety
Maintain cleanliness and hygiene in the tandoor and work area.
Follow food safety standards (HACCP) and personal hygiene guidelines.
Handle hot equipment and utensils safely.
6. Teamwork & Learning
Support and guide Commis II/III and trainees when required.
Learn new recipes, techniques, and tandoor methods from senior chefs.
Assist other sections of the Indian kitchen as needed.
Skills & Qualifications
1-3 years of experience in tandoor cooking.
Strong knowledge of tandoor techniques: grilling, baking, skewering, and dough handling.
Familiarity with Indian spices, marinades, and breads.
Ability to work under high heat and pressure.
Culinary training is an advantage but not mandatory.
