The Tandoor Commis 1 is responsible for preparing, cooking, and presenting tandoor dishes according to established recipes and quality standards. The role requires good knowledge of tandoor operations, food safety, and kitchen hygiene while supporting senior chefs in daily kitchen operations.
Key Responsibilities
Prepare and cook tandoor items such as naan, roti, kebabs, tikka, and tandoori breads
Assist in marination, dough preparation, and mise en place
Operate and maintain the tandoor oven safely and efficiently
Ensure food quality, taste, consistency, and presentation standards
Follow hygiene, sanitation, and food safety (HACCP) guidelines
Maintain cleanliness of the tandoor section and equipment
Monitor stock levels and minimize wastage
Support senior chefs during service and peak hours
Ensure proper storage and handling of raw and cooked food
Comply with health, safety, and company policies
Skills & Requirements
Basic to intermediate knowledge of Indian tandoor cooking
Ability to work in a fast-paced kitchen environment
Understanding of food safety and hygiene standards
Good teamwork and communication skills
Physical stamina to work long hours and handle heat
Willingness to learn and take instructions
Qualifications
Diploma or Certificate in Culinary Arts (preferred)
1-2 years of experience in a tandoor section as Commis or equivalent
