is responsible for preparing, marinating, and cooking Indian tandoori dishes such as kebabs, naan, roti, and other clay oven specialties. The role involves maintaining authentic flavors, consistency, and quality while adhering to hygiene and safety standards in the kitchen.
Key Responsibilities:Food Preparation & Cooking
Prepare mise en place for tandoor section -- marination, skewering, and portioning of meats, seafood, and vegetables.
Operate and manage the tandoor (clay oven) for grilling, baking, and roasting items.
Cook tandoori breads (naan, roti, kulcha, etc.) and kebabs to perfection.
Ensure consistency in flavor, texture, and presentation as per standard recipes.
Regulate tandoor temperature and maintain it throughout the service period.
Assist in preparing gravies, curries, and accompaniments when required.
Kitchen Operations
Ensure all equipment and tools in the tandoor section are clean and well-maintained.
Follow portion control to minimize wastage and maintain cost efficiency.
Check the quality and freshness of ingredients before use.
Properly label, store, and rotate items (FIFO method).
Assist in receiving and checking kitchen supplies.
Quality & Hygiene
Follow all food safety, hygiene, and sanitation guidelines (HACCP / FSSAI standards).
Maintain cleanliness in the tandoor and surrounding work area.
Ensure personal hygiene and grooming standards are maintained at all times.
Dispose of waste properly and safely.
Teamwork & Development
Work in coordination with other kitchen sections (curry, cold, continental, etc.).
Assist in training junior commis and trainees.
Cooperate with service staff to ensure timely delivery of food orders.
Participate in menu tastings and recipe development when required.
Requirements:
Education:
Diploma/Certificate in Culinary Arts or Hotel Management.
Experience:
2-4 years of experience as Commis II or in a similar role specializing in Indian tandoor cuisine.
Skills:
Expertise in tandoor cooking techniques.
Strong knowledge of Indian spices and marinades.
Ability to handle high-temperature cooking environments.
Good communication and teamwork skills.
Understanding of food hygiene and safety practices.
