, you will assist in the preparation and cooking of traditional Tandoori dishes using the tandoor oven. You are expected to maintain high food quality, hygiene standards, and ensure consistency in every dish.
Key Responsibilities:
Prepare and cook Tandoori dishes including naan, roti, kebabs, tikkas, and other grilled items as per standard recipes.
Manage the tandoor oven effectively and ensure proper temperature control.
Support senior chefs in mise en place and daily prep work.
Ensure cleanliness and sanitation of the workstation and equipment.
Marinate meats, seafood, and vegetables as per menu requirements.
Monitor food stock and communicate requirements to the Chef de Partie.
Adhere to hygiene and food safety standards (HACCP or local guidelines).
Follow proper storage and labeling of ingredients.
Assist in buffet setups and live cooking stations if required.
Work collaboratively with the team and assist in other kitchen sections when needed.
Requirements:
Previous experience working in a tandoor section or Indian kitchen.
Basic knowledge of Tandoori cooking techniques and spice blends.
Ability to handle the tandoor oven safely and efficiently.
Understanding of food hygiene and safety practices.
Good physical stamina to work near heat and in a fast-paced environment.
Team player with a willingness to learn and grow.
Preferred Qualifications:
Culinary diploma or relevant certification.
1-2 years of experience in a similar role in a hotel or high-volume restaurant.
Knowledge of North Indian cuisine and regional tandoori variations.
