. The ideal candidate should have in-depth knowledge of Indian spices, marination techniques, and expert-level handling of the tandoor oven to deliver consistent taste, texture, and presentation.
Key Responsibilities:
Prepare and cook a variety of
tandoori dishes
such as:
Tandoori chicken, kebabs, paneer tikka, naan, roti, and kulcha.
Marinate meats, seafood, and vegetables using traditional Indian spices and yogurt-based blends.
Operate and maintain the
tandoor oven
(clay oven) ensuring safety and temperature control.
Ensure proper portion control and minimize food wastage.
Maintain a high standard of
food hygiene, safety, and cleanliness
in the tandoor section.
Coordinate with the Head Chef and kitchen team for menu planning and service.
Monitor stock and inventory of ingredients specific to the tandoor section.
Ensure that all dishes are prepared in accordance with standard recipes and quality expectations.
Train and supervise junior kitchen staff when required.
Requirements:
Minimum 2-4 years of experience as a
Tandoori Chef / Tandoor Cook
.
Strong knowledge of
North Indian cuisine
and tandoor cooking techniques.
Ability to manage the tandoor oven effectively and safely.
Culinary diploma or training in Indian cuisine is a plus.
Understanding of
food safety, hygiene standards, and kitchen discipline
.
Physically fit and able to work in a hot kitchen environment.
Willingness to work in shifts, including weekends and holidays.
Working Conditions:
Fast-paced kitchen setting with exposure to high heat.
Long periods of standing, lifting trays, and handling hot equipment.
Team-oriented environment with occasional long working hours.
