The Tandoor Commis 1 assists in the preparation, cooking, and presentation of traditional Indian tandoor dishes under the supervision of the Tandoor Chef or Chef de Partie. This role involves working with the tandoor oven, marinating meats, baking breads, and ensuring authentic flavor and presentation while maintaining high standards of hygiene and food quality.
Key Responsibilities
Prepare and cook a variety of tandoori dishes including kebabs, naan, roti, and other Indian breads.
Assist in marinating meats, seafood, and vegetables according to established recipes and standards.
Operate and maintain the tandoor oven safely, ensuring correct temperature and heat control.
Ensure all mise en place (preparation work) is completed before each service.
Follow standardized recipes and portion sizes to maintain quality and consistency.
Monitor cooking times to avoid overcooking or undercooking.
Maintain cleanliness and organization of the tandoor section and work area.
Ensure adherence to food safety, hygiene, and sanitation standards at all times.
Assist in checking and storing deliveries properly to maintain freshness and prevent spoilage.
Report equipment malfunctions or shortages to the Chef de Partie or Sous Chef.
Work collaboratively with other kitchen sections to ensure smooth kitchen operations.
Minimize waste and assist in controlling food costs.
Qualifications & Skills
Diploma or certificate in Culinary Arts or equivalent training.
2-3 years of experience in a tandoor kitchen, preferably in an Indian restaurant or hotel.
Strong knowledge of traditional Indian cooking techniques and use of the tandoor oven.
Ability to work efficiently under pressure in a hot, fast-paced kitchen environment.
Good communication and teamwork skills.
Knowledge of basic food safety and hygiene (HACCP certification preferred).
Flexibility to work various shifts, including weekends and holidays.
Work Environment
Commercial kitchen setting with exposure to heat from the tandoor oven.
Physically demanding role requiring standing for long hours and handling hot equipment safely.
