Job Description

The South Indian Cook is responsible for preparing authentic South Indian dishes including dosa, idli, vada, sambar, chutneys, rice varieties, and regional specialties. The role requires expertise in traditional cooking methods, maintaining quality, taste, and hygiene standards.

Key Responsibilities Food Preparation & Cooking



Prepare and cook a wide range of South Indian dishes: Dosa, Uttapam, Idli, Vada Sambar, Rasam, Chutneys Pongal, Upma, Lemon Rice, Curd Rice Kerala, Andhra, Tamil, Karnataka regional dishes Ensure consistency in taste, texture, and presentation. Prepare batters (dosa, idli) and ensure fermentation standards. Maintain proper seasoning, tempering, and cooking techniques. Check freshness and quality of ingredients.

Kitchen Operations



Set up the South Indian section with required mise-en-place, equipment, and supplies. Ensure proper storage, labeling, and rotation of food items (FIFO). Handle dosa tawa, steamers, grinders, and other South Indian cooking equipment safely. Maintain stock levels of dals, rice, spices, coconut, and vegetables. Ensure timely preparation during breakfast and peak hours.

Hygiene & Safety



Follow FSSAI and HACCP food safety guidelines. Maintain cleanliness and sanitation of cooking area, equipment, and utensils. Ensure safe handling of hot tawa, oil, steamers, and kitchen equipment. Maintain personal hygiene and grooming standards.

Teamwork & Coordination



Coordinate with Commis, Helpers, and service staff for smooth service. Support menu planning and introduce new regional South Indian dishes. Assist in training junior cooks on South Indian cuisine techniques.

Requirements



Proven experience as a South Indian Cook / Breakfast Cook in hotels or restaurants. Strong knowledge of South Indian cooking styles and regional cuisines. Ability to work quickly during high-volume breakfast operations. Good knowledge of food hygiene and safety standards. Flexibility to work early morning shifts.

Pay: ₹18,000.00 - ₹20,000.00 per month
