is responsible for supervising stewarding operations to ensure the kitchen and service areas are clean, hygienic, and well-organized. This role includes leading a team of stewards, maintaining sanitation standards, and ensuring efficient support to the culinary and service teams.
Key Responsibilities:Supervision & Leadership:
Oversee daily stewarding operations and guide junior stewards in their duties
Delegate cleaning tasks and ensure completion according to hotel/restaurant standards
Train and mentor new stewarding staff on proper cleaning procedures and safety protocols
Monitor staff attendance, discipline, and performance and report to the Stewarding Supervisor
Cleaning & Hygiene:
Ensure all kitchen equipment, utensils, and work areas are cleaned and sanitized regularly
Maintain cleanliness of dishwashing, pot washing, garbage disposal, and storeroom areas
Inspect stewarding areas for compliance with hygiene and safety standards (HACCP)
Ensure correct use of cleaning materials and chemicals
Inventory & Equipment:
Monitor and maintain stock of cleaning supplies, dishwashing chemicals, and stewarding tools
Ensure dishwashing machines and other stewarding equipment are clean and operational
Report any equipment malfunctions or damages to maintenance or the supervisor
Support to Kitchen & Service:
Coordinate with chefs and service staff to provide timely and efficient support during meal periods
Ensure availability of clean crockery, cutlery, pots, and pans at all times
Assist in the setup and breakdown of banquet functions or special events when required
Requirements:
Minimum 1-2 years of experience as a Steward, with at least 1 year in a supervisory or senior role
Knowledge of kitchen hygiene, sanitation practices, and basic food safety standards
Physically fit and able to perform manual cleaning and lifting tasks
Ability to lead a team and communicate clearly with kitchen and stewarding staff
Willingness to work shifts, weekends, and public holidays
Preferred Qualifications:
Basic hygiene or food safety certification
Experience in hotels, catering, or large-scale F&B operations
Familiarity with HACCP standards and dishwashing machine operation
