Job Description

Menu Planning & Development:


Design and develop authentic Kerala cuisine menus with a focus on traditional flavors, regional specialties, seasonal ingredients, and guest preferences.

Food Preparation & Presentation:


Ensure the highest standards in food preparation, taste, and presentation of Kerala dishes, maintaining consistency and authenticity across all outlets.

Team Leadership:


Supervise, train, and mentor junior chefs and kitchen staff in Kerala cooking techniques, hygiene practices, and operational efficiency.

Quality & Hygiene Compliance:


Enforce strict hygiene and food safety standards (FSSAI compliant), ensuring cleanliness and proper sanitation procedures across all kitchen sections.

Kitchen Operations:


Support the Executive Chef in daily kitchen operations, including inventory management, requisition of supplies, cost control, and wastage reduction.

Innovation & Guest Experience:


Introduce innovative presentations and modern adaptations of Kerala classics to enhance the guest dining experience while retaining authenticity.

Coordination & Communication:


Collaborate with service teams, procurement, and F&B management to ensure smooth operations and timely food service during all meal periods and events.

Event & Banquet Planning:


Lead the Kerala cuisine section in themed nights, cultural festivals, and special events. Coordinate bulk production and buffet setups as required.

Vendor Liaison & Ingredient Sourcing:


Identify and liaise with reliable local vendors for authentic Kerala spices, seafood, and produce to ensure quality sourcing and procurement.

Training & Development:


Conduct regular workshops and tastings to promote Kerala cuisine knowledge and inspire culinary creativity among the team.

Job Types: Full-time, Permanent

Pay: ?60,000.00 - ?80,000.00 per month
