Restaurant Operations Manager

to uphold and elevate our guest experience and operational standards.

Position Summary:



As the

Restaurant Operations Manager

, you will oversee the end-to-end restaurant and bar operations, manage service quality, maintain brand SOPs, and ensure all departments function smoothly. You will be the key point of contact for internal coordination, guest satisfaction, and operational profitability.

Key Responsibilities:Operational Oversight:



Manage day-to-day operations across FOH (Service, Bar, Reservations) and BOH (Kitchen, Stewarding). Lead shift briefings and ensure shift handovers are documented properly. Ensure smooth coordination between kitchen, service, and bar teams. Supervise night operations, especially during weekends and live events.

Team Management:



Lead and manage a team of 60-80 staff, including captains, stewards, bartenders, and hostesses. Monitor performance, attendance, grooming, and discipline. Drive daily briefings, training programs, and service upgrades.

Guest Experience & Service:



Maintain high standards of service, ambience, and hygiene. Personally handle VIP guests, complaints, and special events. Conduct floor walk-throughs to ensure tables, bar counters, and guest zones are managed proactively.

Inventory, Compliance & Finance:



Manage stock controls, wastage monitoring, and vendor coordination. Ensure compliance with licenses, FSSAI, excise, fire safety, and local regulations. Maintain daily sales reports, expense trackers, and coordinate with the Accounts team for vendor payments and monthly P&L.

Event & Coordination:



Collaborate with events and marketing teams for theme nights, DJ line-ups, and private bookings. Maintain coordination with kitchen and bar teams for set menus and special service protocols.

KPIs (Key Performance Indicators):



Guest Satisfaction Score (Google / Zomato / TripAdvisor ratings):

Minimum 4.5+ average

Table Turnover Efficiency:

3x per table per evening during peak season

Staff Attendance & Retention:

Maintain below 5% monthly absenteeism

Cost Control Metrics:

Maintain F&B cost within target (e.g., Food - 28-32%, Liquor - 18-22%)

Complaint Resolution Time:

90% complaints addressed within 10 minutes

Inventory Variance:

Keep shrinkage below 2%

Revenue Targets:

Achieve monthly targets as set by Management based on seasonality

Qualifications & Requirements:



Graduate/Diploma in Hotel Management or equivalent. Minimum

5-7 years

of experience in high-volume F&B or nightlife venues. Previous experience in Goa's hospitality/nightlife circuit is preferred. Strong knowledge of service SOPs, POS systems (e.g., PetPooja, POSist), and inventory tools. Proficiency in English; Hindi and Konkani are advantageous. Should be flexible with late-night shifts, weekends, and holidays.
