is responsible for preparing authentic Kerala-style porottas (layered flatbreads) consistently and efficiently in a restaurant, cafe, or food production setting. The role includes dough preparation, rolling and layering porottas by hand or machine, and maintaining quality, hygiene, and kitchen workflow standards.
Key Responsibilities
Prepare dough daily by measuring and mixing ingredients (flour, water, oil, salt) to achieve the correct consistency.
Portion, roll, stretch, fold, and cook soft, layered porottas by hand or with manual/automatic machines.
Ensure consistency in size, texture, appearance, and taste for all porottas produced.
Operate porotta-making equipment safely and efficiently (if available).
Maintain cleanliness and hygiene at the workstation and comply with food safety standards.
Manage resting and proofing times to ensure a steady supply during service hours.
Assist with other kitchen duties such as packing, dispatch (in factory roles), or prepping accompaniments as needed.
Coordinate with kitchen team to meet peak demand and smooth service. Indeed
Qualifications & Skills
Experience:
Prior experience making porottas in a restaurant, cafe, or food production environment is preferred.
Skill:
Strong ability to hand-roll and cook soft, flaky porottas quickly and uniformly.
Knowledge of both traditional hand techniques and semi-automatic processes is beneficial.
Good understanding of hygiene, kitchen safety, and food handling practices.
Physical stamina to stand long hours and handle repetitive manual tasks.
Teamwork and communication skills.
Working Conditions
