Supervise, train, schedule, and monitor the stewarding team's performance, grooming, and discipline.
Hygiene & Safety:
Ensure strict adherence to health, safety, and sanitation policies (like HACCP) in all kitchen areas, equipment, and waste management.
Inventory Control:
Manage stock of kitchenware, crockery, glassware, and cleaning chemicals; control breakage and loss.
Operational Support:Oversee dishwashing, organize storage, set up/clear stations for functions, and provide timely equipment supply to culinary teams.
Documentation:
Maintain logs for cleaning, maintenance, stock usage, and conduct daily briefings.

Ability to work under pressure in a hot/humid environment.
Knowledge of food safety standards.
