is responsible for preparing and cooking a variety of Indian curry dishes while ensuring high standards of taste, quality, hygiene, and consistency. The role supports senior chefs in daily kitchen operations and contributes to menu execution in the curry section.
Key ResponsibilitiesFood Preparation & Cooking
Prepare mise en place for the curry section (cutting vegetables, marinating meats, grinding masalas, preparing gravies).
Cook a wide range of Indian curries such as North Indian, South Indian, Mughlai, and regional varieties.
Follow standard recipes and maintain consistent taste and presentation.
Assist in preparing tandoori accompaniments or other Indian dishes when required.
Kitchen Operations
Ensure smooth operation of the curry section during service.
Assist CDP or Demi Chef in planning and organizing kitchen tasks.
Properly use kitchen equipment such as gas ranges, tandoor (if needed), mixers, and hot plates.
Maintain stock levels and inform supervisors of shortages in ingredients.
Hygiene & Safety
Follow HACCP and food safety guidelines at all times.
Maintain cleanliness and hygiene in the curry section and workstations.
Store food items properly (labelling, dating, FIFO method).
Ensure safe handling of hot equipment, oils, and spices.
Quality & Standards
Ensure dishes are prepared with authentic flavors and high quality.
Monitor cooking times, temperatures, and textures for consistency.
Reduce food waste and follow portion control standards.
Teamwork & Communication
Coordinate with other kitchen sections to ensure smooth operations.
Guide Commi 2 and Commi 3 when required.
Communicate effectively with senior chefs about issues, requirements, or improvements.
Qualifications & Skills
Experience in Indian curry cuisine (1-3 years preferred).
Strong understanding of Indian spices, masalas, and cooking techniques.
Ability to work in a fast-paced kitchen environment.
Good communication and teamwork skills.
Knowledge of food hygiene and safety standards.
Physical Requirements
Ability to stand for long hours.
Ability to lift moderate weights (e.g., cooking pots, ingredient containers).
Ability to work in a hot kitchen environment.
