Job Description

The Indian Commis II is responsible for assisting in the preparation and cooking of Indian cuisine under the supervision of senior chefs. The role involves maintaining quality, taste, and presentation standards, while ensuring hygiene and safety in the kitchen. The Commis II supports the Demi Chef de Partie and Chef de Partie in daily operations and contributes to smooth service.

Key Responsibilities



Assist in preparing and cooking a variety of Indian dishes, including curries, tandoor items, breads, and regional specialties. Follow standard recipes and instructions provided by senior chefs. Ensure mise en place is prepared for the shift (chopping, marinating, grinding masalas, etc.). Support the Demi Chef de Partie in managing the Indian section during service. Maintain cleanliness, organization, and hygiene of the workstation. Ensure correct storage, labeling, and rotation of ingredients (FIFO system). Assist in minimizing food wastage and controlling portion sizes. Operate kitchen equipment safely and report any maintenance issues. Uphold food safety and sanitation standards (HACCP). Work as part of a team and assist other sections when required..
