Goa's iconic luxury beachside restaurant, is seeking a visionary and highly experienced Head Chef to lead its multi-cuisine kitchen operation across Mediterranean, Indian and Asian cuisines. This is a senior leadership role responsible for culinary excellence, kitchen operations, team management, food quality, hygiene, inventory and cost control, while delivering a world-class dining experience that matches Thalassa's ultra-premium brand standards.
Key Responsibilities -
Culinary Leadership
. Lead the creation, execution and continuous improvement of menus across Mediterranean, Indian and Asian cuisines
. Ensure authenticity, consistency, presentation and taste across all dishes
. Develop seasonal menus, chef specials and event-based offerings
. Maintain high standards of plating, portion control and visual appeal
Kitchen Operations & Service Execution -
. Oversee daily kitchen operations during all service hours
. Ensure timely, accurate and high-quality food output
. Co-ordinate between different cuisine sections for smooth service
. Monitor preparation, cooking, storage and dispatch of food
. Manage kitchen workflows for high-volume premium service
Staff Management & Training -
. Recruit, train and manage sous chefs, line cooks, commis, stewards and kitchen support staff
. Conduct daily kitchen briefings and shift allocations
. Enforce discipline, grooming, hygiene and performance standards
. Build a motivated, efficient and accountable kitchen team
Inventory, Procurement & Cost Control -
. Manage inventory, stock rotation and ordering of all ingredients
. Co-ordinate with suppliers to ensure quality, freshness and pricing . Monitor food cost, wastage and yield control Implement portioning and storage SOPs to minimise loss
. Maintain accurate kitchen records and requisitions
Quality, Hygiene & Safety -
. Enforce FSSAI, HACCP and food safety standards . Ensure kitchen cleanliness, equipment maintenance and pest control
. Maintain hygiene, sanitation and proper storage practices
. Conduct regular kitchen audits and corrective actions
Events, Banquets & Special Services -
. Plan and execute food for large events, VIP dining and themed nights
. Customize menus for private events, weddings and celebrations
. Co-ordinate with operations and service teams for flawless execution
Brand & Guest Experience -
. Maintain Thalassa's luxury, Greek-Mediterranean brand identity through food
. Ensure every plate reflects premium quality and consistency
. Innovate while respecting Thalassa's signature flavors and presentation
Skills & Experience Required -
. 8+ years of experience in multi-cuisine premium kitchens
. Strong expertise in Mediterranean, Indian and Asian cuisines
. Prior experience as Head Chef or Senior Sous Chef in luxury restaurants, resorts or high-volume fine dining
. Proven ability to manage large kitchen teams
. Strong knowledge of inventory, costing and kitchen administration
. High attention to detail, hygiene and quality
. Ability to work in high-pressure, high-volume environments
. Leadership, planning and communication skills
