Key Responsibilities:
Prepare and cook a variety of
Goan dishes
, including seafood curries, pork and chicken preparations, rice dishes, and traditional accompaniments.
Ensure authenticity in flavor, spice balance, and presentation of Goan cuisine.
Assist the Chef de Partie in planning and executing menu items and daily specials.
Maintain
mise-en-place
for assigned section before and during service.
Handle seafood and meats hygienically, ensuring proper storage and freshness.
Follow standard recipes and maintain consistency in portion size and presentation.
Support in controlling food waste and monitoring kitchen inventory.
Maintain cleanliness and organization of the workstation in accordance with
HACCP and food safety standards.
Report any maintenance issues or ingredient shortages to the supervisor.
Ensure teamwork, discipline, and respect within the kitchen hierarchy.
