To support the Chef de Partie in the preparation, cooking, and presentation of authentic Chinese wok dishes, ensuring consistency, quality, and efficiency in a fast-paced kitchen environment.
Key Responsibilities:
Prepare and cook Chinese wok dishes as per restaurant standards.
Assist in menu preparation and recipe development under the guidance of the Chef de Partie.
Maintain
mise en place
: chopping vegetables, preparing sauces, marinating proteins, and ensuring wok station readiness.
Operate the wok station efficiently during service hours, ensuring speed and consistency.
Monitor portion control, food presentation, and taste quality.
Maintain high standards of hygiene, cleanliness, and food safety (HACCP standards).
Ensure proper storage and rotation of ingredients (FIFO).
Assist and train Commis Chefs in wok cooking techniques.
Report shortages or equipment issues to the Chef de Partie / Sous Chef.
Uphold restaurant standards and contribute to a positive kitchen team environment.
