Job Description

Continental Commis 1 and Commis 2 (Continental cuisine) are specialized kitchen roles focused on preparing, cooking, and plating European-style dishes. A Commis 1 acts as a senior assistant with 1-3+ years of experience, handling more complex tasks, whereas a Commis 2 provides support with foundational, high-volume prep work and cooking under supervision. Both roles require strong hygiene adherence, station management, and teamwork.

Continental Commis 1 (Senior)



Experience Level:

1-3+ years in a professional kitchen.

Key Responsibilities:

Specialized Cooking:

Independently prepare and cook, sauces, salads, pastas, grills, and roasts according to standardized recipes.

Station Leadership:

Manage the Continental station, ensuring high-quality output and proper mise-en-place (prep).

Stock Management:

Monitor ingredient stock levels, minimize wastage, and assist in inventory checks.

Support & Training:

Assist Chef de Partie/Senior Chefs in menu execution and provide guidance to Commis 2/3 staff.

Skills:

Expertise in Continental techniques, strong plating skills, and ability to handle high-pressure service.

Continental Commis 2 (Junior/Intermediate)



Experience Level:

1-2 years or experienced from lower levels.

Key Responsibilities:

Prep Work:

Perform essential prep tasks: washing, chopping, peeling, and marinating ingredients.

Assisted Cooking:

Prepare simpler dishes, sauces, and starters under the guidance of Commis 1 or Chef de Partie.

Station Hygiene:

Maintain strict cleanliness of workstations, equipment, and storage areas (HACCP compliance).

Support:

Assist in receiving, storing, and organizing kitchen supplies.

Skills:

Fundamental knife skills, basic cooking knowledge, and strong stamina.

Shared Responsibilities (Both Levels)



Strict adherence to food safety, sanitation, and hygiene standards. Consistent adherence to recipes and portion control. Collaboration with the wider kitchen team for smooth service. Flexibility to work in a fast-paced environment.
