is a senior junior cook responsible for preparing, cooking, and presenting dishes in the continental kitchen. The role involves mise en place, handling grills, sauces, pastas, soups, and salads, maintaining high culinary standards, and supporting the Chef de Partie during operations.
Key ResponsibilitiesFood Preparation
Prepare mise en place for grills, sauces, stocks, vegetables, salads, sandwiches, and pasta.
Chop, slice, marinate, and portion ingredients as per menu requirements.
Assist in preparing soups, appetizers, and continental-style entrees.
Cooking & Presentation
Cook and plate continental dishes such as steaks, pastas, sauteed items, grilled items, and egg preparations.
Follow standardized recipes and plating guidelines.
Ensure food is cooked to the correct temperature, taste, and texture.
Quality Control
Maintain taste, consistency, and presentation of all dishes.
Check freshness and storage conditions of ingredients.
Follow portion control and recipe accuracy.
Kitchen Operations
Work closely with the Chef de Partie during service.
Maintain stock levels of prepared items (sauces, dressings, garnishes).
Label, store, and rotate ingredients following FIFO procedures.
Help with receiving and organizing supplies when needed.
Hygiene & Safety
Keep the continental station clean, organized, and compliant with hygiene standards.
Follow HACCP and food safety procedures.
Handle kitchen equipment safely (grills, ovens, fryers, slicers, etc.).
Teamwork & Learning
Support junior staff (Commis II/III) with tasks and training.
Learn new dishes, techniques, and recipes from senior chefs.
Cooperate with other kitchen sections for smooth service flow.
Skills & Qualifications
1-3 years experience in continental cooking.
Knowledge of grilling, sauteing, roasting, baking, and sauce preparation.
Good knife skills and understanding of continental ingredients.
Ability to work in a fast-paced, high-pressure environment.
Culinary diploma is an advantage but not mandatory.
