To support sushi production by preparing ingredients, maintaining hygiene standards, and ensuring consistency in taste and presentation of sushi dishes as per brand standards.
Key Responsibilities
Prepare sushi ingredients including seafood, vegetables, rice, sauces, and garnishes.
Assemble various types of sushi such as maki rolls, nigiri, sashimi, and hand rolls.
Ensure proper mise-en-place is completed for the shift.
Maintain freshness and proper storage of raw materials, especially seafood.
Adhere to food safety, hygiene, and sanitation standards in all preparation and handling.
Maintain cleanliness of workstations, equipment, and sushi display counters.
Follow standard recipes and presentation guidelines.
Assist in receiving, labeling, and storing inventory properly.
Minimize food wastage and support overall kitchen efficiency.
Cooperate with other sections during busy service times.
Requirements & Skills
Minimum 1 year of kitchen experience, preferably in sushi or Japanese cuisine.
Basic knife skills and understanding of seafood preparation.
Familiarity with sushi ingredients and basic preparation techniques.
Good understanding of food hygiene and safety practices.
Ability to work quickly and efficiently under pressure.
Strong attention to detail and a willingness to learn.
Team-oriented with a flexible attitude.
