The Commi - 1 (South Indian) is responsible for independently preparing and presenting authentic South Indian dishes while maintaining high standards of food quality, hygiene, and consistency. The role requires good knowledge of traditional South Indian cooking techniques and the ability to support senior chefs in daily kitchen operations.
Key Responsibilities
Prepare and cook South Indian dishes such as dosas, idlis, vadas, sambars, chutneys, curries, and rice preparations.
Ensure consistency in taste, portioning, and presentation as per hotel/restaurant standards.
Assist in menu planning and daily mise-en-place for the South Indian section.
Maintain cleanliness and hygiene of the work area in line with FSSAI and hotel safety standards.
Monitor food quality, freshness, and proper storage of ingredients.
Coordinate with Commi - 2, Commi - 3, and kitchen helpers for smooth operations.
Minimize food wastage and follow cost control procedures.
Follow all health, safety, and sanitation policies.
Assist during peak service hours and special events.
Requirements & Qualifications
Minimum
2-4 years of experience
in South Indian cuisine.
Experience in hotels, resorts, or high-volume restaurants preferred.
Strong knowledge of traditional South Indian ingredients and cooking methods.
Ability to work independently with minimal supervision.
Good communication and teamwork skills.
Knowledge of food safety and hygiene standards.
Preferred Skills
Speed and accuracy in preparation.
Ability to handle pressure during busy service hours.
Passion for authentic South Indian cooking.
