The Commi - 1 (Chinese) is responsible for preparing and cooking Chinese cuisine dishes independently while maintaining high standards of food quality, hygiene, and consistency. The role requires good knowledge of Chinese cooking techniques, sauces, and wok operations.
Key Responsibilities
Prepare and cook Chinese dishes including stir-fries, noodles, rice, soups, and appetizers.
Operate wok stations efficiently, ensuring correct heat control and timing.
Prepare sauces, stocks, and mise-en-place for the Chinese section.
Maintain consistency in taste, portioning, and presentation.
Follow standard recipes and kitchen SOPs.
Assist the CDP and Sous Chef during service and peak hours.
Maintain cleanliness and hygiene of the work area as per FSSAI standards.
Ensure proper storage, labeling, and FIFO practice of ingredients.
Minimize food wastage and follow cost control procedures.
Support junior staff and trainees when required.
Requirements & Qualifications
2-4 years of experience
in Chinese cuisine.
Experience in hotels, resorts, or high-volume restaurants preferred.
Good knowledge of Chinese sauces, ingredients, and cooking techniques.
Ability to work independently with minimal supervision.
Good teamwork and communication skills.
Knowledge of food safety and hygiene practices.
