Job Description

The Commis I (Continental) is an integral member of the kitchen team, responsible for preparing and assisting in the creation of high-quality continental dishes under the guidance of senior chefs. This role is hands-on, requiring strong technical skills, creativity, and discipline in maintaining standards expected at a luxury resort.

Key Responsibilities:



Food Preparation & Cooking

Prepare and cook a wide range of continental dishes including starters, salads, soups, pasta, grills, and sauces. Assist the Chef de Partie (CDP) and Deputy Chef de Partie (DCDP) in daily kitchen operations. Ensure proper portioning, seasoning, and presentation as per resort standards.

Kitchen Operations

Support smooth service during breakfast, lunch, and dinner shifts. Follow standard recipes while maintaining consistency in taste and presentation. Assist in mise en place (prep work) for the assigned section.

Hygiene & Safety

Maintain cleanliness and organization in the kitchen and workstation. Adhere to HACCP guidelines, food safety, and sanitation standards. Properly store ingredients and handle equipment with care.

Teamwork & Collaboration

Work closely with fellow chefs to ensure timely service. Support juniors (Commis II/III) by guiding them when needed. Cooperate with other kitchen sections for seamless operations.

Stock & Waste Management

Monitor usage of ingredients and minimize wastage. Inform seniors about shortages or issues with stock.

Qualifications & Experience:



Diploma/degree in Hotel Management or Culinary Arts. 2-4 years of experience in continental cuisine, preferably in luxury resorts, fine dining restaurants, or 5-star hotels. Strong knowledge of continental cooking methods and modern plating techniques. Exposure to international cuisines will be an added advantage.

Essential Skills:



Excellent cooking and knife-handling skills. Ability to work under pressure and manage multiple tasks. Strong discipline, hygiene consciousness, and eye for detail. Team player with good communication skills. Passionate about food and committed to learning new techniques.
