Job Description

The Commis I (Chinese) is responsible for preparing authentic Chinese dishes under the supervision of senior chefs, ensuring that guests experience high-quality flavors, presentation, and service standards that match the reputation of a luxury resort.

Key Responsibilities:

Food Preparation & Cooking

Prepare, cook, and present a wide range of Chinese dishes including dim sums, noodles, fried rice, soups, stir-fries, and wok-based items. Assist Chef de Partie (CDP) and Deputy CDP in daily kitchen operations. Ensure consistency in taste, quality, and presentation.

Kitchen Operations

Handle mise en place for Chinese section (cutting vegetables, preparing sauces, marinades, stocks, etc.). Maintain smooth workflow during breakfast, lunch, and dinner service. Follow standard recipes and plating guidelines.

Hygiene & Safety

Maintain cleanliness and hygiene in the Chinese section and overall kitchen. Adhere strictly to HACCP, food safety, and sanitation standards. Handle ingredients and kitchen equipment safely.

Teamwork & Collaboration

Coordinate with other sections (Continental, Indian, Bakery, etc.) to ensure timely service. Support Commis II/III in their work and share knowledge when needed. Communicate effectively with team members for smooth operations.

Stock & Waste Management

Monitor stock levels for sauces, condiments, and raw materials. Report shortages or quality issues to seniors. Minimize food waste and ensure proper storage.

Qualifications & Experience:

Diploma/degree in Hotel Management or Culinary Arts. 2-4 years of experience in Chinese cuisine, preferably in luxury resorts, fine dining restaurants, or 5-star hotels. Good knowledge of Chinese cooking methods (stir-fry, steaming, wok cooking, deep frying). Familiarity with authentic sauces and condiments like soy, oyster sauce, chili paste, etc.
