The Commi 2nd (Chinese) is responsible for assisting in the preparation and cooking of Chinese dishes while taking on more responsibility than a Commi 3rd. They help maintain the kitchen's standards of quality, cleanliness, and organization, and are expected to have a solid understanding of Chinese cooking techniques and ingredients.
Key Responsibilities:
Prepare and cook basic Chinese dishes, such as stir-fries, dumplings, and soups, under the direction of senior chefs.
Take charge of specific sections of the kitchen, assisting in the preparation of dishes and cooking to ensure that service is efficient and smooth.
Assist in the preparation of sauces, broths, stocks, and other essential components of Chinese cuisine.
Supervise and guide Commi 3rd and kitchen assistants in daily tasks.
Ensure all food preparation is done following hygiene and safety standards.
Help maintain cleanliness and organization in the kitchen, ensuring all areas are tidy and sanitized.
Monitor food quality, presentation, and portion sizes to meet the restaurant's standards.
Assist in controlling inventory and stock levels of ingredients.
Work with senior chefs to develop new dishes or menu items.
Assist with training and development of junior kitchen staff.
