Job Summary:



The

Commis 1 - Indian Tandoor

is responsible for assisting in the preparation and cooking of traditional Indian tandoori items, ensuring authenticity, quality, and consistency. This role involves handling the tandoor oven, preparing marinations, baking Indian breads, and supporting the Tandoor Chef in daily operations, while maintaining hygiene and safety standards.

Key Responsibilities:Tandoor Operations:



Assist in the preparation and cooking of

tandoori items

such as kebabs, tikkas, seekh kebabs, naan, roti, kulcha, and paratha. Properly handle, maintain, and operate

tandoor ovens

(clay or gas). Ensure accurate marination of meats, seafood, and vegetables as per standard recipes. Monitor cooking times and temperatures to ensure dishes are cooked to perfection.

Food Preparation & Mise en Place:



Prepare and portion ingredients for the tandoor section under the supervision of the Chef de Partie. Ensure all marinated items and breads are ready for service in advance. Follow portion control and presentation standards.

Hygiene & Safety:



Maintain cleanliness of the tandoor area and equipment at all times. Follow all food safety and hygiene regulations (HACCP or local standards). Ensure proper labeling and storage of marinated items and bread doughs using FIFO method.

Team Collaboration:



Work closely with the Tandoor CDP and other kitchen sections as needed. Support in banquet, buffet, or a la carte operations as assigned. Be open to learning and improving skills in Indian cooking, especially tandoor techniques.

Qualifications & Skills:



1-2 years of experience in Indian kitchens, preferably with exposure to tandoor operations. Basic understanding of Indian spices, marinades, and tandoori cooking methods. Culinary diploma or certification (preferred but not mandatory). Physically fit to work in a hot kitchen and handle a tandoor oven. Ability to follow instructions, multitask, and maintain cleanliness.

Working Conditions:



High-heat environment due to tandoor ovens. Flexible to work in shifts, including weekends and holidays. Long hours of standing and manual handling involved.

Desirable Experience:



Hands-on experience with Indian breads and tandoori starters. Exposure to traditional Indian clay tandoor ovens. Experience in hotel, catering, or high-volume Indian restaurants.

Pay: ₹22,000.00 - ₹24,000.00 per month
