The Chinese Commis 1 is responsible for preparing and cooking authentic Chinese dishes under the supervision of senior chefs. The role requires expertise in Chinese culinary techniques, wok cooking, and ingredient handling, while maintaining hygiene, safety, and quality standards in the kitchen.
Key Responsibilities
:
Prepare and cook Chinese cuisine including stir-fries, noodles, rice dishes, dim sum, soups, and sauces.
Operate wok and other Chinese cooking equipment efficiently and safely.
Ensure mise-en-place is ready before service.
Follow standard recipes and presentation guidelines.
Monitor food quality, taste, texture, and temperature during preparation and service.
Maintain cleanliness and organization of the workstation and kitchen area.
Properly store and label ingredients and cooked items to prevent spoilage.
Work collaboratively with other team members to ensure smooth kitchen operations.
Adhere to food safety, hygiene, and sanitation standards.
Requirements
:
2-3 years of experience in a professional kitchen with specialization in Chinese cuisine.
Strong knowledge of Chinese cooking styles (Szechuan, Cantonese, Hakka, etc.).
Skilled in using wok, cleaver, and other traditional Chinese kitchen tools.
Ability to multitask and work under pressure.
Good communication skills and a positive team-oriented attitude.
Flexible with work hours, including evenings, weekends, and holidays.
Preferred Skills
:
Experience in dim sum preparation, noodle making, or live cooking (optional but valuable).
Understanding of kitchen inventory and portion control.
Food Safety and Hygiene certification (preferred).
