The Chinese Commis 1 is responsible for preparing and cooking authentic Chinese dishes, supporting senior chefs, and ensuring consistency in taste and presentation. The role requires strong knowledge of Chinese ingredients, cooking methods, and attention to hygiene and kitchen efficiency.
Key Responsibilities
:
Prepare and cook various Chinese dishes including stir-fries, fried rice, noodles, soups, dim sum, and sauces.
Assist in mise-en-place, cutting vegetables, marinating meats, and preparing stocks and sauces.
Operate Chinese kitchen equipment such as wok stations, steamers, and rice cookers.
Follow recipes and instructions from senior chefs to maintain flavor and presentation consistency.
Maintain cleanliness and organization in the Chinese section of the kitchen.
Ensure proper storage, labeling, and handling of all ingredients.
Support in bulk cooking for banquets, buffets, and a la carte service.
Comply with food safety and hygiene standards (HACCP practices).
Minimize wastage and ensure portion control.
Communicate effectively with the kitchen team to ensure smooth operations.
Requirements
:
2-3 years of experience in a professional kitchen, specializing in Chinese cuisine.
Knowledge of Chinese cooking styles (e.g., Cantonese, Szechuan, Hakka, etc.).
Proficient in wok cooking, steaming, deep-frying, and sauteing techniques.
Ability to work under pressure in a fast-paced kitchen environment.
Team player with strong time management and communication skills.
Flexibility to work shifts, weekends, and holidays.
Preferred Qualifications
:
Diploma in Culinary Arts or Food Production (preferred).
Previous experience in a hotel, Chinese specialty restaurant, or pan-Asian kitchen.
Food safety certification or knowledge of HACCP standards (preferred).
