Job Description

The Chinese Cook is responsible for preparing a variety of authentic Chinese dishes, ensuring high food quality, hygiene standards, and timely production. The role includes wok cooking, sauce preparation, ingredient cutting, and maintaining kitchen cleanliness.

Key Responsibilities :Food Preparation & Cooking



Prepare and cook Chinese cuisine including stir-fried, steamed, fried, roasted, and dim sum dishes. Master wok techniques and maintain consistency in taste, texture, and presentation. Prepare sauces, stocks, gravies, and marinades as per recipe standards. Follow standardized recipes and portion control guidelines. Ensure freshness and proper handling of all ingredients.

Kitchen Operations



Set up the Chinese kitchen section with necessary tools, equipment, and ingredients. Assist in menu planning and introduce new Chinese dishes when required. Maintain proper storage, labeling, and rotation of food items (FIFO). Minimize food wastage and control food cost. Ensure all equipment is cleaned and maintained properly.

Hygiene & Safety



Follow FSSAI and hotel hygiene standards for food handling. Maintain cleanliness of work area and ensure sanitization at all times. Comply with HACCP guidelines and maintain proper documentation. Use safety procedures while handling knives, hot surfaces, and equipment.

Teamwork & Coordination



Coordinate with Commis, Helpers, and other kitchen staff. Communicate effectively with service team during busy operations. Assist in training junior staff on Chinese cooking techniques.

Requirements



Proven experience as a Chinese Cook / Wok Cook in hotels or restaurants. Strong knowledge of Chinese cooking methods and regional cuisines (Sichuan, Cantonese, Hakka, etc.). Ability to work under pressure during peak hours. Good knowledge of hygiene and food safety. Flexibility with shifts and work schedules.

Educational Qualification



Diploma in Culinary Arts / Hotel Management preferred. Formal training in Chinese cuisine is an added advantage.

Physical Requirements



Ability to stand for long hours. Ability to handle high heat and fast-paced kitchen conditions.
