Job Summary

We are looking for a skilled and disciplined Chinese Commis 1 with strong expertise in Pan-Asian cuisine, particularly sushi and dim sum production. The ideal candidate should have sound technical knowledge, excellent knife skills, and the ability to deliver consistent quality across Asian sections in a fast-paced professional kitchen.

Key Responsibilities

Prepare and execute a wide range of Pan-Asian dishes with consistency and attention to detail Independently handle sushi preparation, including rice seasoning, knife work, rolling techniques, portion control, and presentation Assist in dim sum preparation, shaping, filling, steaming, and frying techniques Maintain freshness, hygiene, and temperature control for raw and cooked Asian ingredients Follow standardized recipes, plating guidelines, and service timelines Perform daily mise-en-place for Asian sections Maintain cleanliness, food safety, and hygiene standards at all times Coordinate effectively with senior chefs and kitchen team during service Reduce wastage and ensure proper storage of ingredients
Required Skills & Experience

Minimum 2-4 years of experience in Chinese or Pan-Asian kitchens Proven hands-on expertise in sushi making and handling Good working knowledge of dim sum and Asian cooking techniques Strong knife skills and understanding of ingredient balance Ability to work under pressure during high-volume service Good communication and teamwork skills
Preferred Qualifications

Experience in multi-cuisine, Asian, or fine-casual dining restaurants Exposure to open-kitchen or live sushi counter operations Formal culinary training is an added advantage
