is a senior junior cook specializing in Chinese cuisine. The role includes preparing mise en place, cooking menu items, supporting wok, dim sum, and hot kitchen operations, and maintaining high standards of taste, hygiene, and presentation in the Chinese section.
Key ResponsibilitiesFood Preparation
Prepare mise en place for wok, steamer, grill, and cutting stations.
Handle chopping, slicing, marinating, and seasoning specific to Chinese dishes.
Assist with preparation for dim sum, noodles, soups, and stir-fried items.
Cooking & Presentation
Cook Chinese dishes following recipes and chef instructions (wok dishes, fried rice, noodles, soups, steamed dishes, etc.).
Maintain proper wok handling techniques (high heat control, timing, and seasoning).
Ensure dishes are presented according to restaurant standards.
Quality Control
Check freshness and quality of ingredients (vegetables, meats, seafood, sauces).
Maintain consistent taste, texture, and temperature.
Follow traditional techniques and flavor profiles of Chinese cuisine.
Kitchen Operations
Support the Chef de Partie and Sous Chef during service.
Communicate with other kitchen sections for smooth workflow.
Monitor stock levels and assist in receiving, storing, and rotating ingredients (FIFO).
Safety & Hygiene
Keep the workstation clean, organized, and compliant with food safety standards.
Follow HACCP and hygiene protocols strictly.
Safely operate kitchen equipment: wok burners, steamers, fryers, knives, etc.
Teamwork & Learning
Train and guide Commis II/III when needed.
Learn new skills and recipes from senior chefs.
Cooperate with the entire kitchen team during busy service periods.
Skills & Qualifications
1-3 years experience in a Chinese kitchen (wok, dim sum, or hot kitchen).
Strong knife skills and familiarity with Chinese ingredients.
Ability to work under high heat and pressure at the wok station.
Knowledge of marinades, sauces, Chinese spices, and cooking techniques.
Culinary certification is an advantage but not mandatory.
