The Chinese Commis I assists in the preparation, cooking, and presentation of authentic Chinese dishes under the supervision of senior chefs. The role involves maintaining high culinary standards, ensuring kitchen hygiene, and supporting the smooth operation of the Chinese kitchen section.
Key Responsibilities:
Prepare, cook, and present Chinese dishes (e.g., Cantonese, Sichuan, or other regional cuisines) according to recipes and quality standards.
Assist the Demi Chef or Chef de Partie in daily kitchen operations.
Ensure all mise-en-place (preparations) is completed before each service.
Maintain cleanliness and hygiene in the kitchen as per food safety standards (HACCP).
Store food items properly and check freshness of ingredients.
Monitor portion control and minimize food waste.
Ensure kitchen equipment and utensils are cleaned and maintained properly.
Follow safety, sanitation, and hygiene procedures at all times.
Assist in training and guiding junior commis and kitchen helpers.
Communicate effectively with other kitchen sections to ensure timely food preparation and service.
Qualifications and Skills:
Diploma or certification in Culinary Arts or equivalent training.
Minimum 1-2 years of experience in a professional Chinese kitchen.
Strong knowledge of Chinese cooking techniques, sauces, and ingredients.
Good knife skills and attention to detail.
Ability to work in a fast-paced environment and under pressure.
Team player with a positive attitude and willingness to learn.
Basic English or Mandarin communication skills preferred.
Physical Requirements:
Able to stand for long periods and work in hot kitchen conditions.
Physically fit to lift and carry kitchen supplies as required.
