Job Description

A Chinese Chef de Partie (CDP) manages a specific, specialized section of a Chinese kitchen (e.g., wok, dim sum, or roast) to ensure high-quality food preparation, consistency, and food safety standards. They are responsible for cooking dishes, supervising junior staff, managing inventory for their station, and assisting with menu development.

Key Responsibilities

Food Preparation:

Expertly prepare, cook, and present Chinese dishes (e.g., stir-fries, dim sum) following established recipes, portion sizes, and presentation standards.

Section Management:

Oversee operations of a specific station, ensuring smooth, efficient service during busy hours.

Quality & Hygiene Control:

Maintain strict cleanliness, sanitation, and food safety (HACCP) standards, including proper food storage and temperature checks.

Staff Supervision:

Train, guide, and supervise commis chefs and kitchen helpers, delegating tasks effectively.

Inventory Control:

Manage section stock levels, reduce waste, and assist with ordering ingredients.

Collaboration:

Work with the Head/Sous Chef on menu planning, creating daily specials, and ensuring consistent food quality.

Key Qualifications & Skills

Proven experience as a Chinese Commis or Demi Chef de Partie. Strong knowledge of Chinese cooking techniques (Wok, Steam, Fry) and ingredients. Ability to work under pressure in a fast-paced environment. Leadership skills and the ability to mentor junior staff. Relevant culinary qualifications or certifications.
