to lead the Indian Curry and Tandoor section. The CDP will oversee the preparation of authentic vegetarian Indian curries and tandoori dishes, ensuring high quality, consistency, and hygiene standards while managing and training the kitchen team within the section.
Key Responsibilities:
Manage the Indian Curry and Tandoor kitchen section, ensuring smooth operations during service hours.
Prepare and cook a variety of vegetarian Indian curries, gravies, and tandoori items according to standardized recipes and portion controls.
Operate tandoor ovens safely and efficiently for baking breads and grilling vegetables.
Supervise, train, and guide junior kitchen staff including Commis and helpers to maintain quality and efficiency.
Ensure consistency in taste, presentation, and portion sizes in every dish served.
Maintain strict hygiene and sanitation practices in compliance with FSSAI and HACCP standards.
Monitor inventory levels and assist in procurement and stock management for the section.
Collaborate with other kitchen sections and coordinate with the front-of-house team for timely service.
Manage waste control and cost efficiency within the section.
Participate in menu planning, recipe updates, and kitchen meetings as required.
Requirements:
Minimum 4 years of experience in Indian vegetarian kitchens with at least 2 years as a CDP or equivalent role managing Indian curry and tandoor sections.
Strong knowledge of Indian spices, cooking methods, and tandoor operations.
Proven leadership and team management skills.
Ability to maintain quality standards under pressure in a fast-paced kitchen environment.
Excellent communication and organizational skills.
Familiarity with FSSAI and HACCP regulations.
Preferred Qualifications:
Diploma or degree in Culinary Arts or Hotel Management (preferred but not mandatory).
Experience in multi-cuisine or pure vegetarian Indian restaurants.
Creativity and passion for traditional and contemporary Indian cuisine.
Work Schedule:
Rotational shifts covering lunch and dinner services.
Weekend and holiday availability required.
