The Chef de Partie - South Indian Cuisine is responsible for managing the South Indian kitchen section, ensuring authentic taste, quality food production, hygiene standards, and efficient kitchen operations while maintaining consistency and guest satisfaction.
Key Responsibilities
Oversee preparation and production of South Indian dishes including breakfast, lunch, dinner, and live counters
Ensure authenticity, taste consistency, portion control, and presentation of all dishes
Plan daily mise-en-place and ensure timely food service
Supervise and train commis and kitchen helpers assigned to the section
Maintain food quality as per hotel standards and guest expectations
Ensure adherence to food safety, hygiene, and sanitation standards (HACCP / FSSAI)
Monitor proper storage, labeling, and FIFO of raw materials
Control food cost, wastage, and portioning
Coordinate with stores for requisitions and stock control
Maintain cleanliness of kitchen equipment and work areas
Assist in menu planning and introduction of new South Indian specialties
Handle guest feedback and special dietary requests related to South Indian cuisine
Skills & Competencies
Strong knowledge of traditional South Indian cuisine
Expertise in breakfast items (idli, dosa, vada, appam, puttu, etc.)
Knowledge of regional specialties (Kerala, Tamil Nadu, Andhra, Karnataka)
Leadership and team supervision skills
Time management and multitasking abilities
Good communication and coordination skills
Qualifications & Experience
Diploma / Certificate in Culinary Arts or Hotel Management preferred
Minimum 4-6 years of experience in South Indian kitchen operations
Prior experience as CDP or Senior Commis in a hotel or resort
Working Conditions
Shift-based work including early morning shifts
Long standing hours in hot kitchen environment
Job Types: Full-time, Permanent
Pay: ?25,000.00 - ?27,000.00 per month
