Job Summary:
The Continental Chef de Partie (CDP) will be responsible for preparing and presenting continental dishes in accordance with resort standards. You will manage a specific section of the kitchen, ensuring the highest quality of food preparation and presentation. The role requires a deep knowledge of continental cuisine, strong leadership skills, and the ability to work in a fast-paced kitchen environment.
Key Responsibilities:
Food Preparation & Cooking:
Prepare, cook, and present continental dishes according to the established recipes and menus.
Ensure all food items are prepared in a timely manner, following food safety and hygiene standards.
Monitor food stock levels and coordinate with the kitchen team to ensure the timely ordering and replenishment of supplies.
Section Management:
Take responsibility for a specific section within the kitchen (e.g., grill, saute, pastry), ensuring smooth and efficient operations.
Supervise junior kitchen staff, ensuring they follow proper procedures and deliver high-quality dishes.
Delegate tasks to kitchen staff and ensure all dishes meet the required standards for taste, presentation, and quality.
Quality Control:
Ensure food quality, consistency, and presentation meets the resort's standards.
Review and monitor all dishes before they are sent to the service area, ensuring they are visually appealing and correctly portioned.
Kitchen Hygiene & Safety:
Follow all food safety standards, including proper handling, storage, and sanitation of ingredients.
Maintain a clean and organized work area, ensuring compliance with health and safety regulations.
Ensure all kitchen equipment is maintained and used according to operational standards.
Collaboration:
Work closely with other members of the kitchen team, including the Head Chef and Sous Chef, to develop new menu items and improve existing dishes.
Participate in the training and development of junior kitchen staff, sharing knowledge and skills to improve overall kitchen performance.
Menu Planning & Development:
Contribute ideas for new dishes, specials, and seasonal menus based on continental cuisine trends.
Assist with menu planning and inventory management to ensure efficient use of kitchen resources.
Qualifications:
Proven experience as a Chef de Partie or similar role in a high-volume kitchen, with a focus on continental cuisine.
In-depth knowledge of continental cooking techniques, ingredients, and menu design.
Strong leadership skills and the ability to motivate and manage a team.
Familiarity with food safety regulations and kitchen hygiene standards.
Excellent communication and organizational skills.
A formal culinary qualification (e.g., Culinary Arts degree or diploma) is preferred.
Flexibility to work in shifts, including weekends, holidays, and evenings.
Physical Requirements:
Ability to work in a hot, fast-paced environment.
Ability to stand for long periods and lift up to 25 lbs.
