The Chef de Partie - Chinese is responsible for overseeing the Chinese kitchen section and ensuring the consistent preparation and presentation of high-quality Chinese dishes. The CDP must have expertise in Chinese cooking techniques, strong leadership skills, and the ability to train and supervise junior kitchen staff.
Key Responsibilities:
Manage the Chinese section of the kitchen and ensure all dishes are prepared according to authentic techniques and recipes.
Cook and present Chinese dishes including stir-fries, dim sum, noodles, fried rice, steamed items, and sauces.
Supervise and guide Commis chefs and kitchen assistants in the Chinese section.
Ensure food is prepared and served on time, especially during busy service hours.
Maintain the highest standards of hygiene, cleanliness, and food safety.
Monitor portion and waste control to maintain food cost targets.
Collaborate with the Sous Chef in planning menus, developing new Chinese dishes, and improving existing recipes.
Ensure all mise-en-place is prepared before service.
Take responsibility for the proper maintenance and functioning of kitchen equipment in the Chinese section.
Check stock levels and communicate requirements to the store or Sous Chef.
