Conduct pre-shift briefings; allocate stations and side duties.
Greet, seat, and engage guests; handle special requests, allergies, and complaints with quick recovery.
Ensure accurate order taking, course sequencing, and timely service; coordinate with kitchen/bar.
Drive suggestive selling and upselling (beverages, signature dishes, desserts).
Monitor table turns, reservation flow, and waitlist management.
Team Leadership & Training
Supervise and coach Waiters/Stewards on service standards, menu knowledge, and grooming.
Conduct on-job training; maintain training logs and buddy system for new joiners.
Enforce discipline, attendance, and punctuality on the floor.
Operations & Compliance
Ensure mise-en-place, table setups, linen, cutlery, crockery, glassware readiness.
Verify KOT/BOT accuracy; minimize voids and bill corrections.
Oversee cash-out, bill settlement, discounts, and promotions as per SOP.
Maintain opening/closing checklists and daily handover reports.
Ensure FSSAI hygiene standards (FoSTaC), basic HACCP practices, and personal hygiene.
Coordinate with Housekeeping, Engineering, and Security for maintenance and safety.
Maintain par levels for condiments, stationery, and operating equipment; raise indents.
Support banquet operations (briefings, buffet supervision, billing) as assigned.
