Baker - Role & Responsibilities1. Daily Production
Prepare and bake
high-quality sourdough, focaccia, other breads, and cakes according to established recipes and timelines.
Monitor and maintain
proofing, fermentation, and baking standards
to ensure consistency and quality.
Manage
batch production planning
based on daily/weekly cafe needs and special orders.
2. Recipe Execution & Development
Follow standardized recipes and techniques for all baked items.
Contribute to
new recipe development and seasonal menu changes
, when required.
Maintain detailed notes for each batch, including hydration, fermentation times, and any deviations.
3. Inventory & Ingredient Management
Maintain accurate inventory of flour, yeast, butter, and other baking ingredients.
Forecast ingredient requirements and coordinate with the purchasing team to avoid shortages or wastage.
Ensure
FIFO (First In, First Out)
practices and proper storage of ingredients.
4. Kitchen Hygiene & Food Safety
Maintain
cleanliness and sanitation
of the baking area and all baking equipment.
Follow proper
food safety protocols
in line with FSSAI and cafe standards.
Ensure proper
cooling, storage, and labeling
of all finished products.
5. Equipment Handling & Maintenance
Operate ovens, mixers, proofers, and other baking tools with care.
Report and coordinate maintenance of faulty equipment as needed.
6. Time & Workflow Management
Manage time efficiently to ensure production is complete before opening hours.
Prepare mise-en-place (preparations) for the next day to ensure a smooth flow.
Work collaboratively with the kitchen team to meet cafe service demands.
7. Quality Control
Conduct quality checks on baked goods--texture, flavor, crust, and presentation.
Minimize rework or product wastage by maintaining standards.
8. Training & Team Support (if applicable)
Train junior bakers or kitchen assistants, if part of a larger team.
Share knowledge of baking techniques and support a learning environment.
