The Store & Purchase Manager is responsible for end-to-end inventory control, purchasing, vendor management, and cost discipline for the restaurant. The role ensures uninterrupted kitchen and bar operations while maintaining quality standards, optimal stock levels, and budgeted food & beverage costs.
Key Responsibilities
1.? ?Purchasing & Procurement
o? ?Plan and execute daily, weekly, and monthly purchases for kitchen, bar, bakery, and non-food items
o? ?Raise POs based on par levels, consumption trends, and forecasted covers
o? ?Negotiate pricing, credit terms, and delivery schedules with vendors
o? ?Source alternates for key SKUs to avoid stock-outs
2.? ?Store & Inventory Management
o? ?Maintain accurate stock records for food, beverage, and consumables
o? ?Ensure FIFO, proper labelling, and correct storage practices
o? ?Conduct daily spot checks and weekly/monthly stock counts
o? ?Track wastage, pilferage, and variance; report deviations promptly
3.? ?Cost Control & Reporting
o? ?Monitor food cost, beverage cost, and overall COGS
o? ?Prepare daily GRNs and reconcile invoices with POs
o? ?Highlight price fluctuations and suggest corrective actions
o? ?Share weekly inventory and purchase reports with management
4.? ?Vendor & Quality Management
o? ?Ensure consistent quality of all incoming goods
o? ?Coordinate with chefs and bar team on specifications and standards
o? ?Handle vendor escalations related to quality, pricing, or delays
o? ?Evaluate and onboard new vendors when required
5.? ?Coordination & Compliance
o? ?Work closely with kitchen, bar, service, and accounts teams
o? ?Ensure statutory compliance for weights, invoices, and documentation
o? ?Maintain hygiene and safety standards in all storage areas
Key Skills & Competencies

Experience & Qualifications
o? ?2-5 years of experience in store/purchase roles within restaurants, hotels, or QSRs
o? ?Diploma or degree in Hospitality / Supply Chain (preferred, not mandatory)
