Job Title: Tandoor Chef
Location: Cafe Khoblu
Reporting To: Head Chef
Role Overview
Responsible for operating and managing the tandoor section
Prepare, cook, and present all tandoor items with consistency and speed
Ensure safe handling of the tandoor and maintain quality and hygiene standards
Key Responsibilities
1. Tandoor Operations and Cooking
Prepare and cook tandoor items including rotis, naans, kulchas, parathas, tikkas, kebabs, and grilled vegetables
Manage marination, dough preparation, and mise en place for the tandoor section
Ensure correct temperature control and efficient tandoor operation
Maintain consistency in taste, texture, and doneness of all tandoor items
Support main kitchen with breads and grilled items during service
2. Kitchen Operations and Service Support
Coordinate with Indian Chef and Head Chef during service
Ensure timely dispatch of tandoor orders during peak hours
Step in to support other kitchen sections when required
Follow opening and closing SOPs for the tandoor area
3. Hygiene, Safety, and Compliance
Maintain personal hygiene, grooming, and uniform standards
Follow FSSAI food safety and hygiene guidelines
Ensure cleanliness of tandoor area, tools, skewers, and work surfaces
Handle fire, fuel, and hot equipment safely at all times
4. Inventory and Wastage Control
Monitor stock of dough, marinades, meats, vegetables, and fuel
Follow FIFO and proper storage practices
Minimise wastage through portion control and careful handling
Inform Head Chef about low stock or preparation needs
5. Equipment Handling and Maintenance
Ensure safe usage of tandoor, gas lines, chimneys, and ventilation
Report equipment faults, gas leaks, or safety risks immediately
Assist in routine cleaning and basic maintenance of the tandoor
6. Discipline and Teamwork
Follow instructions from the Head Chef and management
Maintain punctuality, discipline, and professionalism
Communicate clearly with kitchen and service staff
Contribute to a calm, respectful, and efficient kitchen environment
Job Type: Full-time
Pay: ₹15,000.00 - ₹20,000.00 per month
