Job Summary:



We are seeking a skilled and passionate Tandoor Cook to join our dynamic kitchen team. The ideal candidate will have expertise in traditional North Indian tandoor cooking techniques and a deep understanding of spices and marinades. You will be responsible for preparing high-quality, authentic tandoori dishes, maintaining the tandoor oven, and ensuring consistent taste and presentation that meets our five-star standards.

Key Responsibilities:



Food Preparation & Cooking:



Prepare a wide variety of tandoori items, including kebabs (seekh, reshmi, chicken tikka), tandoori chicken, fish, paneer tikka, naans, rotis, and kulchas. Expertly marinate meats, poultry, seafood, and vegetables using traditional recipes and spice blends. Skillfully operate and manage the clay tandoor oven, controlling temperature and cooking times for perfect results. Ensure all dishes are cooked to the correct temperature, texture, and flavor profile. Plate finished dishes with attention to visual appeal and garnish as per standard recipes.

Kitchen Operations:



Maintain impeccable hygiene and sanitation standards in the tandoor section, following HACCP and FSSAI guidelines. Monitor inventory levels of tandoor-specific ingredients (e.g., specific spices, skewers, dough). Assist in daily mise-en-place (preparation) and ensure the section is set up for service. Coordinate with the main kitchen line for timely preparation and service flow. Minimize waste and control food costs within the section.

Quality & Safety:



Consistently adhere to standardized recipes and portion sizes. Conduct regular quality checks on raw materials and finished products. Strictly adhere to all kitchen safety protocols, especially when handling the high-heat tandoor and sharp tools. Maintain a clean, organized, and safe workstation at all times.

Teamwork:



Work collaboratively with other chefs, cooks, and stewards. Assist in training junior kitchen staff in basic tandoor procedures. Follow instructions from the Sous Chef and Executive Chef diligently.

Pay: ?18,000.00 - ?22,000.00 per month
