Job Title: Tandoor Commis I

Location: Peninsula Redpine Hotel, Mumbai
Job Summary:
The Tandoor Commis I is responsible for preparing, cooking, and presenting dishes in the tandoor section according to the hotel's standards. The role requires skill in handling Indian clay ovens, marination techniques, and maintaining authentic taste and presentation of all tandoor items.
Key Responsibilities:
Prepare, marinate, and cook all tandoor dishes including breads, kebabs, and curries as per standard recipes.
Ensure proper use, cleaning, and maintenance of the tandoor and other kitchen equipment.
Assist the Tandoor Chef in mise en place and ensure all ingredients are ready before service.
Monitor cooking temperatures and timings to ensure food quality and consistency.
Follow hygiene, sanitation, and safety standards as per hotel policy and HACCP guidelines.
Minimize wastage and ensure optimum utilization of ingredients.
Support other kitchen sections as required and maintain teamwork and communication.
Attend briefings, training sessions, and staff meetings as scheduled.
Maintain personal grooming and uniform standards at all times.
Requirements:
Minimum 2-3 years of experience as a Tandoor Commis in a reputed hotel or restaurant.
Strong knowledge of Indian cuisine and tandoor operations.
Ability to work under pressure and handle multiple tasks during peak hours.
Good communication and interpersonal skills.
Flexible to work in shifts, weekends, and holidays.
Qualification:
Diploma or Certificate in Culinary Arts / Hotel Management preferred.
