Prepare, cook, and present a variety of tandoori dishes, such as naan bread, chicken tikka, and kebabs, according to established recipes and standards.
Mise en Place:
Assist senior chefs with daily preparation (mise en place), including marinating meats and vegetables using traditional spices and techniques, and ensuring all ingredients are fresh and ready for service.
Tandoor Operations:
Safely and efficiently operate and maintain the tandoor oven, managing temperature and fuel to ensure optimal cooking conditions.
Quality Control:
Monitor food preparation and cooking processes to ensure consistency in taste, texture, and presentation, adhering to all quality expectations.
Hygiene and Safety:
Maintain the highest standards of cleanliness and sanitation in the tandoor section and all work areas, following all health and safety guidelines and food safety regulations.
Inventory Management:
Assist in monitoring and managing stock levels of tandoor ingredients and supplies, informing senior chefs of any shortages and helping with stock rotation.
Collaboration:
Work collaboratively with the kitchen team to ensure smooth operations and timely execution of orders, particularly during peak service hours.
Training Assistance:
Support senior chefs in training junior kitchen staff on basic tandoor cooking techniques and kitchen protocols.
Qualifications & Skills :
Experience:
Proven experience as a Commi I or in a similar role within an Indian kitchen, with hands-on experience in tandoor cooking.
Knowledge:
Strong knowledge of traditional Indian spices, marinades, and tandoor cooking methods is essential.
Education:
A high school diploma or equivalent is required. A culinary degree, certificate, or professional apprenticeship is a plus.
