at Deoghar Jharkhand , you will be responsible for the heart of our Indian kitchen. You will manage the clay oven (Tandoor) to produce high-quality kebabs, tikkas, and Indian breads. Your goal is to ensure every "Naan" is soft, every "Roti" is crisp, and every "Kebab" is succulent, maintaining the high standards expected by our elite club members.
II. Key Responsibilities
Tandoor Management:
Expertly handle the firing and temperature control of the clay oven. Know when the oven is ready for bread vs. when it is ready for meats.
The Art of Breads:
Prepare and serve a variety of Indian breads (Naan, Kulcha, Roti, Paratha) with consistent thickness and texture.
Marination Mastery:
Assist in the preparation of "First" and "Second" marinations. Ensure meats and paneer are marinated for the correct duration to achieve deep flavor penetration.
Skewer Technique:
Properly thread meats, seafood, and vegetables onto skewers to ensure even cooking and preventing the food from falling into the coals.
Mise-en-place:
Prepare the "Tandoor Bouquet"--chopping coriander, preparing butter/ghee glazes, and ensuring mint chutney and lachha onions are ready for garnishing.
Safety & Maintenance:
Season new clay ovens (Tandoor conditioning) and ensure the station is cleaned and the ashes are cleared safely every day.
