Ensure standardized taste profiles across batches and outlets
Own recipe SOPs with precise measurements, temperatures, and timelines
Control over color, aroma, mouthfeel, shelf life
2. Process & SOP Ownership
Develop and strictly follow Standard Operating Procedures (SOPs) for each product
Maintain batch-wise documentation (ingredients, yield, wastage, cooking time)
Ensure process efficiency without sacrificing authenticity
Reduce dependency on "hand-feel" and move towards repeatable methods
3. Quality, Hygiene & Food Safety
Enforce FSSAI, hygiene, and food safety norms inside the kitchen
Ensure personal and team hygiene discipline at all times
Monitor raw material quality (milk, ghee, nuts, sugar/jaggery)
Reject substandard inputs--no compromises allowed
4. Yield, Cost & Wastage Control
Achieve target yields per batch as per costing norms
Minimize wastage, rework, and rejects
Work closely with management on COGS optimization without taste dilution
Understand that margin protection is part of the job, not someone else's problem
5. Team Leadership & Training
Train junior halwais and kitchen staff on recipes, SOPs, and hygiene
Build a second line of capability--business must not stop if one person is absent
Enforce discipline, punctuality, and accountability on the shop floor
Mandatory
5 -15+ years of hands-on experience as a Sweet Master / Halwai
Strong mastery in milk sweets, ghee sweets, and festival items
Deep understanding of temperature control, sugar stages, milk reduction
Ability to work with weighing scales and SOPs (non-negotiable)
Preferred
Experience in organized retail sweet brands or central kitchens
Exposure to sugar-free / healthy variants (stevia, jaggery, dates, etc.)
Experience in high-volume production without quality drop
