This role demands in-depth knowledge of regional South Indian flavors, ingredients, and cooking techniques, as well as strong kitchen management and organizational skills.
Key Responsibilities:
Prepare a variety of South Indian dishes, including but not limited to: dosa, idli, vada, sambar, rasam, chutneys, biryani, and various regional curries.
Ensure authenticity and consistency in taste, portion, and presentation.
Plan and develop South Indian menus, including daily specials and seasonal offerings.
Manage kitchen inventory, including sourcing quality ingredients specific to South Indian cuisine.
Ensure cleanliness, hygiene, and safety standards in the kitchen as per food safety regulations.
Train and supervise junior kitchen staff in South Indian cooking techniques.
Control food costs and minimize waste without compromising quality.
