We are seeking a dynamic and experienced

Sous Chef

to lead and elevate our culinary operations. The ideal candidate will bring deep knowledge of Tamil Nadu's rich culinary heritage, particularly Chettinad and Thanjavur cuisines, while demonstrating excellence in team leadership, kitchen management, and menu innovation.

Key Responsibilities



Manage daily kitchen operations, ensuring efficient and timely food production while maintaining high-quality standards. Supervise, mentor, and coordinate junior chefs, commis, and kitchen support staff to uphold hygiene, discipline, and consistency. Collaborate with the Head Chef to design regionally inspired menus, develop recipes, and establish pricing strategies aligned with the property's identity. Monitor inventory levels, plan procurement, and control food costs to maintain profitability without compromising on quality. Ensure full compliance with HACCP standards, food safety protocols, and Tamil Nadu government health regulations. Support culinary storytelling by highlighting local ingredients and traditional cooking techniques.

Desired Candidate Profile



Experience: 6-12 years of progressive experience in food production, with a strong background in South Indian cuisine. Expertise: In-depth understanding of Chettinad, Thanjavur, and other Tamil regional cuisines; ability to curate authentic and contemporary dishes using seasonal local produce. Menu Planning: Skilled in crafting cost-effective menus that balance culinary creativity with budgetary constraints. Leadership: Proven experience managing and motivating diverse kitchen teams; excellent communication and organizational skills. Adaptability: Passion for sustainable and regionally focused culinary practices; ability to thrive in a heritage hospitality environment.
