Specialty Sous Chef - Chinese Cuisine

Role Overview

As the Specialty Sous Chef for Chinese Cuisine, you will be responsible for overseeing the preparation, presentation, and execution of authentic and contemporary Chinese dishes. You will work closely with the Executive Chef to ensure culinary excellence, team coordination, and guest satisfaction.

Key Responsibilities

Lead the Chinese kitchen operations, ensuring consistency and authenticity in flavors and presentation. Innovate and execute traditional and modern Chinese dishes, including Cantonese, Sichuan, and regional specialties. Supervise and train kitchen staff to maintain high culinary standards. Collaborate with procurement for sourcing quality ingredients. Ensure compliance with hygiene, safety, and food quality standards (FSSAI/HACCP). Assist in menu planning, costing, and seasonal dish development. Monitor kitchen inventory, reduce wastage, and control food costs.

Requirements

Minimum 5 years of experience in Chinese cuisine, with at least 2 years in a sous chef or equivalent leadership role. Deep knowledge of Chinese cooking techniques, sauces, and ingredients. Experience in a high-end restaurant or luxury hotel preferred. Strong leadership and communication skills. Culinary degree or diploma is a plus. Passion for culinary innovation and team collaboration.

Pay: ₹45,000.00 - ₹55,000.00 per month
