to oversee our pizza section. The ideal candidate will have hands-on experience in traditional and modern pizza-making techniques, dough preparation, and oven management, ensuring every pizza served meets the highest quality and authenticity standards.
Key Responsibilities:
Prepare high-quality pizzas using authentic Italian techniques and recipes.
Handle all aspects of pizza preparation, including dough mixing, fermentation, stretching, topping, and baking.
Operate and maintain wood-fired, stone, or electric pizza ovens as per kitchen setup.
Ensure consistency in taste, texture, and presentation of pizzas.
Manage mise-en-place and ensure all ingredients are prepped, portioned, and stored properly.
Train, guide, and supervise junior chefs and commis in the pizza section.
Monitor and maintain inventory of pizza ingredients and supplies.
Adhere strictly to hygiene, food safety, and sanitation standards (HACCP).
Collaborate with the Head Chef and Sous Chef for menu development, new pizza varieties, and seasonal offerings.
Minimize wastage and ensure efficient use of resources.
Ensure timely preparation and smooth service during peak hours.
Requirements:
Diploma or degree in Culinary Arts / Hotel Management or equivalent.
4-7 years of professional experience, with at least 2 years in a dedicated pizza section (Italian restaurant or hotel).
Strong knowledge of Italian pizza styles (Neapolitan, Roman, etc.) and dough fermentation techniques.
Skilled in managing and operating pizza ovens (wood-fired/stone deck/electric).
Excellent understanding of ingredients, seasoning, and flavor balance.
Strong leadership, organizational, and communication skills.
Ability to work efficiently in a high-pressure, fast-paced kitchen environment.
Flexible to work in shifts, weekends, and holidays.
